Christmas Coffee Cake
- 2 cubes margarine
- 1 1/2 c. sugar
- 2 eggs
- 1 c. sour cream
- 2 c. flour, sifted
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. vanilla
- 1 Tbsp. cinnamon
- 4 Tbsp. sugar
- handful raisins and walnuts
- 1/2 c. chopped nuts
- Beat margarine, 1 1/2 cups sugar and eggs together until light and fluffy.
- Add sour cream.
- Add flour, baking soda, baking powder and vanilla.
- Spoon half of batter into angel cake pan, greased and floured.
- In small dish, mix cinnamon and 4 tablespoons sugar.
- Sprinkle half of this over batter and a handful of raisins and walnuts.
- Add rest of batter, rest of cinnamon-sugar mixture and another 1/2 cup chopped nuts (raisins optional).
- Place in cold oven; set oven for 350u0b0 and bake about 1 hour.
