Taco Pies
- 2 (9-inch) frozen deep-dish pie crust thawed
- 1 lb. ground beef
- 1 (16 oz.) can refried beans
- 1 onion, chopped
- 1 c. crushed tortilla chips
- 1 c. shredded Cheddar cheese
- 2 c. shredded lettuce
- 1 large tomato, diced
- sour cream
- black olives
- Preheat oven to 350 degrees.
- Bake pie crust according to package directions, but cut baking time in half.
- In a large heavy skillet, over medium-high heat, cook ground beef until evenly brown; drain excess fat.
- Divide beans evenly into each pie shell, smearing over the bottoms and sides of partially baked shells. Spread a layer of ground beef over the beans, and top with the onion, crushed tortilla chips, and cheese.
- Bake 15 to 20 minutes, or until the crust is golden brown, and the cheese is bubbly.
- Top with lettuce, tomatoes, sour cream and black olives.
