Oven Fried Orange Roughy(Makes 4 Servings)
- 1 c. skim or low-fat milk
- 1 tsp. salt
- 4 orange roughy fillets, haddock, cod or scrod, washed and patted dry (1 1/4 lb.)
- 2/3 c. dried bread crumbs
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. ground thyme or crumbled dried thyme leaves
- Preheat oven to 450u0b0.
- Spray baking dish with vegetable oil spray.
- In shallow bowl or pie plate combine the milk and salt. Add the fillets and coat them well.
- In second shallow bowl or pie plate combine the bread crumbs, Parmesan cheese and thyme.
- Remove fillets one at a time from the milk and dip them into the crumb mixture, coating them thoroughly.
- Place the breaded fillets in a prepared baking dish.
- Place pan in middle of the oven and bake fillets 12 minutes or until they are just baked through.
- Remove from oven and serve.
