Taco Soup
- 2 lb. ground turkey
- 1 small onion, chopped
- 2 (4 oz.) cans chopped green chilies
- 1 tsp. salt
- 1 tsp. pepper
- 1 (16 oz.) can pinto beans, drained
- 1 (1 1/4 oz.) pkg. taco seasoning
- 1 can kidney beans
- 1 1/2 c. water
- 1 (1 oz.) pkg. Ranch dressing mix
- 1 (14 1/2 oz.) can hominy or corn, drained
- 1 can green limas, drained
- 3 cans tomatoes (juice and all)
- shredded cheese
- tortilla chips
- In large pot, brown turkey and onions.
- Drain all of juices except tomatoes and add all ingredients except cheese and chips to turkey mixture.
- Bring to a boil.
- Reduce heat and simmer 30 minutes.
- Top with cheese and serve with tortilla chips.
- You might add chopped onions, also.
