Mary'S Fruit Cake
- 4 1/2 c. plain flour
- 1 tsp. baking powder
- 1/2 tsp. ground cloves
- 1/2 tsp. cinnamon
- 1/2 tsp. mace
- 1 c. brown sugar, packed
- 1 c. sugar
- 10 eggs, well beaten
- 1 c. syrup
- 1 lb. margarine
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 1 lb. mixed fruit
- 1 lb. chopped dates
- 1 lb. raisins
- 2 qt. pecans
- 1 pt. fig preserves
- 1 small bag coconut
- 1/2 c. orange juice
- Mix fruit, coconut and nuts.
- Stir in eggs.
- Add part of flour and
- stir
- to
- coat.
- Add spices and baking powder to the remaining
- flour.
- Cream
- butter
- and sugar.
- Add other liquids and blend thoroughly.
- Add flour and mix well.
- Combine creamed mixture with fruit mixture. Bake in 2 greased tube pans at 250u0b0 for 2
- 1/2
- to 3 hours.
- Wrap cakes tightly and allow to mellow for a couple of weeks before serving.
