Orange Buttermilk Meringue Pie
- 1 c. sugar
- 6 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/2 c. orange juice
- 2 c. buttermilk
- 3 egg yolks, slightly beaten
- 1 1/2 tsp. grated orange peel
- 9-inch unbaked pie shell
- 3 egg whites (for meringue)
- In saucepan, combine sugar, cornstarch and salt.
- With a wire whisk gradually blend in orange juice, the buttermilk and egg yolks.
- Cook over medium heat, stirring constantly, until mixture begins to boil; cook 2 to 3 minutes.
- Stir in orange peel.
- Remove pan from heat and set aside.
- Prepare 3 egg white meringue. Preheat oven to 350u0b0.
- Pour filling into baked pie shell.
- Spread meringue over hot filling.
- Bake 10 to 12 minutes or until golden. Cool on a wire rack.
- Makes 8 servings.
