Orange Buttermilk Meringue Pie

  1. In saucepan, combine sugar, cornstarch and salt.
  2. With a wire whisk gradually blend in orange juice, the buttermilk and egg yolks.
  3. Cook over medium heat, stirring constantly, until mixture begins to boil; cook 2 to 3 minutes.
  4. Stir in orange peel.
  5. Remove pan from heat and set aside.
  6. Prepare 3 egg white meringue. Preheat oven to 350u0b0.
  7. Pour filling into baked pie shell.
  8. Spread meringue over hot filling.
  9. Bake 10 to 12 minutes or until golden. Cool on a wire rack.
  10. Makes 8 servings.
