Portuguese Sausage And Lentil Soup

  1. Cook sausage whole.
  2. Cool, slice and reserve.
  3. In heavy soup pot, saute ham, onion, pepper and carrot in oil until tender. Stir in seasoning.
  4. Cook 5 minutes more.
  5. Add all other ingredients except last two.
  6. Cover pot partially and simmer gently for 2 hours.
  7. Taste; adjust seasoning with salt and pepper. Add shredded spinach and serve.
