Fruit Muffins
- 1 c. Kretschmer honey wheat germ
- 1 c. all-purpose flour
- 1/3 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- 1 c. skim milk
- 1/4 c. vegetable oil
- 2 egg whites, slightly beaten
- 1 c. blueberries
- 1 mashed banana or chopped apple
- Heat oven to 400u0b0.
- Line 12 muffin cups with paper baking cups or lightly grease bottoms only with nonstick cooking spray. Combine first 5 ingredients.
- Add combined milk, oil and egg whites; mix just until dry ingredients are moistened.
- Stir in fruit.
- Fill prepared muffin cups almost full.
- Bake 20 to 25 minutes or until golden brown.
- Serve warm or store tightly wrapped in freezer.
- To reheat, microwave on High about 30 seconds per muffin.
