Basic Cornbread Dressing
- 2 c. crumbled cornbread
- 1/2 c. dry bread crumbs
- 2 medium onions, chopped
- 1/2 green pepper, chopped
- salt and pepper
- 2 Tbsp. bacon drippings
- 2 eggs, beaten
- 2 stalks celery, chopped
- chicken broth
- 1/2 tsp. celery salt
- Saute onions, celery and green peppers.
- Soften bread crumbs with chicken broth.
- Add sauteed vegetables and eggs.
- Stir your dressing until it is smooth.
- There is no way to tell if this has the right amount of salt unless you taste it.
- You can vary this by adding 1/8 teaspoon Mexican chili powder or Creole seasoning gives it a good flavor.
- Chopped parsley is always good.
- Heat in 400u0b0 oven until heated through.
- Makes 6 to 8 servings.
