Shrimp Stuffed Bell Peppers
- 6 to 8 bell peppers, blanched
- 2 Tbsp. shortening
- 1 1/2 lb. chopped boiled shrimp (or 1 lb. ground beef)
- 3 c. cooked rice
- 1 onion
- 1/2 c. green onion
- 1 rib chopped celery
- salt and pepper to taste
- 1 beaten egg
- 1 tsp. Italian seasoning
- 1 small can tomato sauce
- 1 tsp. sugar
- 1 c. Ragu sauce (no meat kind)
- 1 to 2 tsp. paprika
- 1/2 c. chopped cheese (optional)
- Brown onions and celery (if use beef, brown it also) in shortening.
- Add rice, chopped shrimp, egg, cheese, Italian seasoning and salt and pepper to taste.
- Stuff peppers firmly with stuffing.
- Place in a 5-quart heavy boiler with tomato sauce, Ragu and sugar.
- Add approximately 2 cups water.
- Sprinkle peppers with paprika.
- Boil on medium heat for about 1 hour with pot covered.
