Fruit-And-Cereal Brunch Bread
- 1 c. whole wheat flake cereal (Wheaties)
- 1 c. orange juice
- 1 egg
- 1/4 c. vegetable oil
- 3/4 c. mashed bananas (2 small)
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. sugar
- 1 tsp. ground cinnamon
- 1/4 c. raisins
- 1/2 c. packed brown sugar
- 3 Tbsp. flour
- 1 Tbsp. ground cinnamon
- 3 Tbsp. margarine
- 1/4 c. chopped pecans
- Combine first 2 ingredients in large bowl; let stand 5 minutes.
- Combine egg, oil and bananas.
- Add to cereal mixture. Combine 1 1/2 cups flour and next 5 ingredients.
- Add to cereal mixture, stirring just until moistened.
- Pour batter into greased 9-inch square pan.
- Combine brown sugar and next 2 ingredients. Cut in margarine until mixture resembles crumbs.
- Stir in pecans. Sprinkle over batter.
- Bake at 350u0b0 for about 40 minutes.
- Yields 9 servings.
