Garden Casserole
- 1 large onion, sliced
- 1 medium sweet red pepper, cut into strips
- 6 small baking red potatoes (unpeeled), sliced
- 2 c. (8 oz.) shredded Swiss cheese
- 1/4 tsp. pepper
- 1/2 tsp. dried whole rosemary
- 2 cloves garlic, minced
- 2 Tbsp. oleo, melted
- 1/4 c. all-purpose flour
- 1 (10 oz.) pkg. frozen green beans, thawed
- 1 c. half and half
- 1/2 tsp. salt
- 16 strips sweet red pepper
- Saute onion, red pepper strips and garlic in oleo until crisp-tender.
- Add flour; cook 1 minute, stirring constantly. Spoon half of the onion mixture into a lightly greased 13 x 9 x 2-inch baking dish.
- Layer half each of the potato slices, green beans and cheese.
- Repeat layers of onion mixture, potatoes and green beans.
