Chocolate Outrage Snack Cake
- 1 c. (2 sticks) butter or margarine, softened
- 1 1/3 c. oatmeal (uncooked)
- 1/2 c. flour
- 1 c. firmly packed brown sugar
- 2 eggs
- 1/2 c. walnuts (optional)
- 1 tsp. vanilla extract
- 12 oz. pkg. semi-sweet chocolate morsels, divided
- In a large bowl, combine butter or margarine, oatmeal, flour, brown sugar, eggs, walnuts and vanilla.
- Beat 3 minutes at medium speed until fluffy.
- Stir in 1 cup of chocolate chips.
- Spread batter in an 8-inch square micro-safe pan.
- Cover with wax paper; microwave on High 4 minutes.
- Rotate 1/4 turn; microwave on High 4 to 5 minutes or until top appears dry and bottom is an even color. Sprinkle remaining chips over top of warm cake.
- Let stand 10 minutes and spread evenly over cake.
