Turkey And Asparagus Fajitas
- 3/4 lb. turkey cutlets, cut into bite size pieces
- 1/2 lb. slender asparagus spears, cut into 1-inch pieces
- 1/4 c. Zesty Italian dressing
- 1/2 tsp. ground cumin
- 1 (12 1/2 oz.) pkg. flour tortillas
- 1 Tbsp. olive oil
- 1 large tomato, cored and chopped
- 2 oz. hot pepper or regular Monterey Jack cheese, shredded (1/2 c.)
- salsa (optional)
- light sour cream or yogurt (optional)
- shredded lettuce (optional)
- Preheat oven to 350u0b0.
- Warm tortillas in foil 10 minutes. Combine turkey, asparagus, dressing and cumin in medium size bowl. Let stand for 15 minutes; drain.
- Heat oil in large skillet over medium heat.
- Add drained turkey mixture; stir-fry 3 to 5 minutes or until asparagus is tender.
- Stir in tomato.
- Make sure turkey is done, too.
- Unwrap tortillas.
- Spoon turkey mixture down center of each tortilla.
- Sprinkle cheese.
- Roll up.
- Serve with salsa, light sour cream or yogurt and shredded lettuce, if desired.
