Harvest Molasses Cake
- 3 1/2 c. sifted cake flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. allspice
- 3/4 c. butter or margarine
- 1 1/4 c. granulated brown sugar
- 2 eggs
- 3/4 c. light molasses
- 3/4 c. canned pumpkin
- 1 c. finely chopped walnuts
- 1/2 c. finely chopped dates
- 1/2 c. chopped raisins
- 3/4 c. buttermilk
- Sift flour, baking powder, salt, baking soda and spices together.
- Cream butter or margarine; add sugar gradually and cream well.
- Add eggs, one at a time, beating well after each addition.
- Add pumpkin, walnuts and fruits.
- Mix well.
- Grease and flour a 10-inch tube pan.
- Pour batter into pan.
- Bake in a slow oven at 350u0b0 for 65 minutes or until done.
- Cool thoroughly. Frost with Orange Butter Cream Frosting.
