Fruit Of The Bayou
- 1 qt. milk
- 1 stick oleo or butter
- 2 lb. white crab meat
- 2 c. chopped celery
- 2 Tbsp. fresh chopped parsley
- 2 egg yolks, seasoned with onion juice
- 1/2 lb. grated American cheese
- 4 Tbsp. flour
- 2 Tbsp. Worcestershire sauce
- 1 large can mushrooms
- 5 lb. chopped, boiled shrimp
- 2 small trout or catfish, parboiled
- 1 small bell pepper, chopped
- 1 pkg. green onions, chopped
- 3/4 c. cooking sherry
- 2 tsp. paprika
- juice of 1 lemon
- salt and pepper
- Make white sauce with milk, flour and butter. Add seafood. Saute celery, bell pepper, parsley and green onions in a little butter. Add sherry, mushrooms, egg yolks (whipped) and seasonings. Combine with cream sauce and fish. Fold in grated cheese. Bake in a greased casserole with buttered crumbs on top.
- Bake 35 minutes at 350u0b0 until bread crumbs lightly brown and casserole is bubbly.
