1, 2 Or 3 Alarm Chili
- 3 lb. chili meat*
- 2 c. chopped green onion
- 2 c. green peppers, diced
- 2 cloves garlic, finely chopped
- 2 cans (28 oz.) crushed tomatoes
- 2 medium onions, diced
- 1/2, 1 or 1 1/2 tsp. Tabasco or hot pepper sauce for 1, 2 or 3 Alarm Chili
- 1/2 c. hot salsa (2 alarm) or 1/2 c. chopped jalapeno pepper (3 alarm)
- 1, 2 or 3 Tbsp. chili powder
- 1 Tbsp. oregano
- 2 Tbsp. cumin
- 1 tsp. salt
- 1/2 or 1 tsp. cayenne pepper (2 or 3 alarm)
- Lightly brown meat; add green onions and garlic.
- Cook until onion is transparent (about 5 minutes).
- Add green pepper.
- Cook for 5 minutes.
- Add crushed tomatoes, Tabasco and salsa or jalapeno peppers (for 2 or 3 alarm).
- Cover and simmer for 30 minutes, stirring occasionally.
- Add remaining ingredients and simmer slowly for 1 to 2 hours.
