Bacon, Lettuce And Tomato Soup
- 6 strips bacon, cooked and crumbled
- 1 Tbsp. bacon drippings, strained
- 1 yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 (16 oz.) can plum tomatoes, chopped
- 3 Tbsp. tomato paste
- 1 Tbsp. chopped fresh basil (1 tsp. dried)
- 3 Tbsp. flour
- 4 c. chicken stock
- 1/4 tsp. sugar
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 head lettuce, shredded
- Saute onion and garlic in bacon drippings for 5 minutes.
- Stir in tomatoes with liquid, tomato paste and basil.
- Cook 2 to 3 minutes.
- Stir in flour and whisk to blend.
- Add stock, sugar, salt and pepper.
- Simmer 15 minutes.
- Just before serving, add bacon and lettuce.
- Serve warm.
- Serves 6 to 8.
