Potato Salad With Hard-Boiled Eggs
- 7 large baking potatoes, washed and cut in half for boiling
- 3 hard-boiled eggs, chopped (if you are watching the cholesterol, use just the egg whites)
- 1/2 small onion, chopped fine and rinsed in cold water
- 1 1/2 tsp. salt
- 1 tsp. fresh ground pepper
- 1 tsp. celery seed
- 2 Tbsp. white wine vinegar
- 1/2 c. mayonnaise
- small bunch fresh parsley
- Boil potatoes in a large pot of salted water until done, approximately 15 to 20 minutes.
- Test for doneness with a fork. Drain into a colander and let cool.
- Peel skin and cut potatoes into cubes.
- Place potatoes in a large mixing bowl and add chopped eggs and onion and remaining ingredients.
- Mix with a large spoon and refrigerate at least 2 hours.
- Serves 8 to 10.
