Chicken With Artichokes And Peas
- 2 Tbsp. flour
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 3 whole, medium size chicken breasts, skinned, boned and cut into thin strips
- 2 Tbsp. olive oil
- 1 c. chicken broth
- 1/4 c. dry white wine
- 1 (9 oz.) pkg. frozen artichoke hearts
- 1/4 lb. thinly sliced Prosciutto or ham, cut crosswise in half, then into strips
- 1 (10 oz.) pkg. frozen peas
- 1/4 c. chopped parsley
- Combine flour, salt and pepper.
- Coat chicken strips with flour mixture.
- In a 12-inch skillet over medium-high heat in hot olive oil, cook chicken until lightly browned, stirring frequently.
- Add broth, wine, artichokes and Prosciutto; heat to boiling.
- Reduce heat to low, cover and simmer 5 minutes, stirring occasionally.
- Stir in peas; cook 5 minutes more or until chicken is fork-tender.
- Serves 6.
