Crock Pot Minestrone Soup
- 1/2 lb. hamburger
- 1/4 c. Wesson oil
- 1 clove minced garlic
- 1 c. chopped onion
- 1 c. chopped celery
- 1 6-oz. can tomato paste
- 1 tsp. rosemary leaves, or oregano
- Last add No. 1 can kidney beans with liquid
- 1 c. small elbow macaroni
- 1 10-1/2 oz. can beef broth
- 2-1/2 qt. water
- 1/2 head small cabbage
- 10-oz. pkg. frozen mixed vegetables
- 2-1/2 tsp. salt
- 1/4 tsp. pepper
- Use 6-quart kettle.
- Cook hamburger, garlic, onion and celery in oil.
- Stir in tomato paste and next seven ingredients.
- Bring to a boil, cover and simmer slowly one hour.
- Add remaining ingredients and cook 15 minutes longer.
- Garnish with Parmesan cheese.
- Tastes better the longer it cooks.
