Layered Strawberry Cheesecake Pie
- 1 c. graham cracker crumbs
- 2 Tbsp. sugar
- 3 Tbsp. reduced calorie margarine, melted
- 1/2 c. water
- 4 eggs
- 1 (16 oz.) carton low-fat cottage cheese
- 1/2 c. sugar
- 1/2 c. instant nonfat dry milk powder
- 1/4 c. all-purpose flour
- 1 Tbsp. lemon juice
- 2 tsp. vanilla extract
- 1/8 tsp. salt
- 4 c. fresh strawberries, washed and hulled
- 1 Tbsp. cornstarch
- 1 c. unsweetened orange juice
- Combine first 3 ingredients; press evenly into bottom of 9-inch spring-form pan.
- Combine next 9 ingredients in container of electric blender; process 1 minute or until smooth.
- Pour into crust.
- Bake at 300u0b0 for 1 hour.
- Turn off heat and leave in oven 1 hour.
- Set aside to cool.
- Arrange strawberries on top of pie. Combine cornstarch and orange juice in saucepan, stirring well. Cook over low heat 1 minute or until thickened and clear, stirring constantly.
- Cool.
- Pour glaze over strawberries; chill.
- Makes about 12 servings.
