South Carolina Bread Pudding
- 8 slices sandwich bread, torn
- 1/4 cup butter, melted (optional)
- 2 cups evaporated milk
- 2 large eggs, lightly beaten
- 6 tablespoons granulated sugar
- 1/2 cup raisins
- 1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)
- 1 (8 ounce) can fruit cocktail, drained
- 1 teaspoon cinnamon (or to taste)
- 1 teaspoon vanilla (or to taste)
- 1/4 teaspoon salt
- Preheat oven to 350*F and lightly grease an 8x8 baking dish.
- Mix bread and other ingredients in a large bowl until well-combined.
- Pour into baking dish and bake for approximately 45 minutes - 55 minutes. Check at the 45 minute mark.
- Cool to room temperature and serve plain or with hard sauce, lemon, vanilla or caramel sauce. Refrigerate leftovers. Tastes better the next day.
