Peach Salad
- 2 (3 oz.) pkg. peach jello
- 4 c. peaches, chopped
- 1/2 c. sugar
- 1 egg, beaten
- 1 c. whipped cream
- 1/2 c. marshmallows
- 3 1/2 c. boiling water
- 1 c. peach juice
- 2 Tbsp. flour
- 1 (3 oz.) pkg. cream cheese (soft)
- 1 c. chopped nuts
- 1/2 c. Cheddar cheese, shredded
- Dissolve gelatin in hot water; chill until it begins to set. Fold in peaches.
- Turn into a 3-quart mold or a dish.
- Chill until firm.
- In top of double boiler, combine peach juice, sugar, flour and egg.
- Cook until thickened, stirring constantly.
- Cool. Fold in cream cheese and whipped cream.
- Add nuts and marshmallows.
- Spread on gelatin; sprinkle cheese on top.
- Chill several hours before serving.
