Cherry Cola Salad
- 1 (6 1/2 oz.) can pitted dark sweet cherries
- 1 (20 oz.) can crushed pineapple
- 1 (3 oz.) pkg. black cherry gelatin
- 1 (3 oz.) pkg. raspberry gelatin
- 1 (12 oz.) can cola, chilled
- 1 c. pecans, chopped
- 2 (3 oz.) pkg. cream cheese, softened
- 1 c. finely chopped celery
- 1/2 c. flaked coconut
- Drain cherries and pineapple, reserving juice.
- Add enough water to juice to make 2 cups liquid.
- Bring liquid to boil.
- Add gelatin, stirring to dissolve.
- Stir in cola.
- Chill until lightly thickened.
- Combine celery, pecans, cherries, pineapple and coconut, if desired.
- Beat cream cheese until smooth and fluffy; add to fruit
- mixture, stirring well.
- Fold cream cheese mixture into gelatin; pour into a 13 x 9 x 2-inch pan.
- Chill until firm.
- Cut into squares to serve.
