Vegetable Lasagna
- 2 eggs
- 24 oz. Ricotta
- 24 oz. cottage cheese
- 16 oz. lasagna noodles
- 1 Tbsp. parsley flakes
- 2 pkg. chopped spinach, thawed and drained
- 1/2 c. grated Romano cheese
- 1/2 c. grated Parmesan cheese
- 16 oz. sliced Mozzarella
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 c. grated celery
- 1/2 c. grated carrot
- 1/2 c. grated onion
- Italian seasoning
- basil
- salt and pepper to taste
- Provolone cheese
- Mix cottage cheese, eggs, Ricotta, parsley, basil, Romano, Parmesan, Italian seasoning, spinach and carrot.
- Add salt, pepper, garlic and onion powder
