English Muffin Pizza
- 2 English Muffins, halved
- 20 slices of Pepperoni
- 1 c. Shredded Monterey Jack Cheese
- 2 tsp. Italian Salad Dressing
- 1 medium Ripe Tomato, sliced in four
- Soft Butter or Margarine
- Toast each english muffin half.
- Lightly spread with butter. Place two paper towels atop two coupled paper plates.
- Separate pepperoni and place atop paper towels.
- Microwave on High for 20-30 seconds (do not blacken).
- Remove from microwave and dab off excess oil with paper towel.
- Spread 1/2 tsp. salad dressing on each muffin half.
- Place 1 slice tomato and 5 slices of pepperoni on each muffin half.
- Top each with 1/4 c. of cheese.
- Place muffins on non stick cookie sheet.
- Broil on high for 5 minutes or until browned (no more than 8 minutes).
- Cool 1 minute.
- Serve.
