Potato-Crusted Sausage Quiche

  1. Combine egg substitute, cottage cheese, flour, pepper and Tabasco sauce in a large bowl; stir to mix well.
  2. Stir in the cheese, sausage, and scallions; set aside.
  3. Coat a 9-inch deep-dish pie pan with nonstick cooking spray.
  4. Slice the unpeeled potatoes 1/4-inch thick, and arrange the slices in a single layer over the bottom and sides of the pan to form a crust.
  5. Pour egg mixture into the crust.
  6. Bake uncovered at 375u0b0 for 45 minutes, or until a sharp knife inserted into the center of the quiche comes out clean. Allow to cool at room temperature for 5 minutes before cutting into wedges and serving.
  7. Makes 5 servings.
