Dolly Sods Cake
- 2 c. coarsely chopped apples (preferably Mountaineer or Stayman, but York or Golden Delicious will do)
- 2 c. cranberries
- 2 c. sugar
- 2 eggs
- 1/2 c. vegetable oil
- 1 or 2 Tbsp. brandy or bourbon
- 2 c. flour
- 2 tsp. baking soda
- 4 tsp. cinnamon
- 1 tsp. salt
- 1 c. chopped black walnuts (no substitutions)
- Combine apples, cranberries and sugar and let stand. Beat eggs slightly. Beat in oil and brandy. Mix flour, baking soda, cinnamon and salt. Stir flour mixture into liquid alternately with apple/cranberry/sugar mixture. Stir in black walnuts. Put batter (it will be stiff) into greased and floured tube or Bundt pan. Bake at 350u0b0 for about 1 hour. Let stand until cool. Turn out on rack to complete cooling.
