Skillet Paella
- 1 onion, chopped
- 2 red peppers, chopped
- 1 green pepper, chopped
- 1 clove garlic, minced
- 1 Tbsp. oil
- 1 c. chicken broth
- 1 tsp. vinegar
- 1/2 tsp. coriander
- 10 small clams
- 10 shrimp
- 10 mussels
- 1/2 tsp. oregano
- pinch of black cracked pepper
- 1 can artichoke hearts
- 1 c. rice, cooked with pinch of saffron
- In a frying pan or electric fry pan saute onion, red and green peppers and garlic in oil.
- Add broth, vinegar and seasonings. Simmer, covered, for 5 minutes.
- Add artichoke hearts and rice; mix thoroughly.
- Place seafood on top.
- Cover and simmer until heated thoroughly and seafood is cooked.
- Makes 4 to 6 servings.
