Skillet Paella

  1. In a frying pan or electric fry pan saute onion, red and green peppers and garlic in oil.
  2. Add broth, vinegar and seasonings. Simmer, covered, for 5 minutes.
  3. Add artichoke hearts and rice; mix thoroughly.
  4. Place seafood on top.
  5. Cover and simmer until heated thoroughly and seafood is cooked.
  6. Makes 4 to 6 servings.
