Quick Stir-Fry
- 1 Tbsp. cooking oil
- 1 c. sliced onion
- 1 c. sliced mushrooms
- 1 c. sliced carrots
- 1 c. chopped broccoli
- 1 minced clove garlic or 1/2 tsp. garlic powder
- 1 tsp. minced ginger or 1/2 tsp. powdered ginger
- 1/2 to 1 lb. lean meat (beef, chicken, pork or shrimp, cut in slivers
- 3/4 c. broth or water and chicken or beef bouillon
- 2 tsp. cornstarch
- 1 Tbsp. soy sauce
- Heat skillet to medium-high heat.
- Add oil and when sizzling hot, add meat, vegetables, garlic and ginger and stir-fry until meat is done and vegetables are tender-crisp.
- Blend cornstarch with chicken broth or with bouillon and water.
- Stir into meat and vegetable mixture.
- Add soy sauce and reduce heat.
- Cook for 5 more minutes.
