Lemon Delight
- 1 1/8 c. finely chopped pecans
- 1 c. flour
- 1 stick butter
- 1 (8 oz.) pkg. cream cheese
- 1 c. powdered sugar
- 1 (8 oz.) Cool Whip
- 2 boxes lemon instant pudding mix
- 3 c. cold milk
- 1 tsp. vanilla flavoring
- Mix 1 cup chopped pecans, flour and butter together.
- Put in 9 x 13-inch pan and bake at 400u0b0 for 20 minutes.
- Let cool.
- Let cream cheese soften and cream together with powdered sugar.
- When blended, mix in 5 ounces of Cool Whip.
- Spread on top of cooled pecan mixture.
- Mix pudding mix, milk and vanilla together. Spread over cream cheese mixture.
- Let chill and then spread on remaining 3 ounces Cool Whip.
- Sprinkle chopped pecans on top. Keep refrigerated.
- Try coconut cream pudding instead of lemon. It's good also.
