Summer Stuffed Chicken Breasts

  1. Prepare breasts for stuffing by cutting pocket in center.
  2. Combine feta, tomatoes, parsley, lemon juice, olive oil, zest, garlic, salt and pepper in a bowl.
  3. Stuff each breast with 1/4 cup filling.
  4. Coat both sides of breast with oil, salt and pepper.
  5. Grill chicken, uncovered, 10-12 minutes per side.
  6. (Oil the grates before grilling.).
  7. If oven cooking, uncovered at 350F for 45 minutes.
  8. Let chicken rest, whole and uncut, for 5-10 minutes before serving.
