Frosted Orange Salad
- 1 (20 oz.) can pineapple chunks
- 1 (16 oz.) can sliced peaches
- 1 (6 oz.) pkg. orange gelatin
- 1 1/4 c. boiling water
- 3/4 c. ginger ale
- 1 c. whipping cream
- 1/2 c. salad dressing or mayonnaise
- 1 c. miniature marshmallows
- 3 Tbsp. toasted coconut
- Drain fruit; reserve juice.
- Add enough water to juice to make 1 3/4 cups.
- Dissolve gelatin in boiling water.
- Stir in reserved juice and ginger ale.
- Chill until consistency of unbeaten egg whites.
- Fold in fruit and spoon into lightly oiled 12 x 8 x 2-inch dish.
- Chill until firm.
- Beat whipping cream until soft peaks form.
- Fold in salad dressing and marshmallows.
- Spread on top of fruit mixture.
- Sprinkle coconut over top.
- Chill well. Serves 12.
