Brown Sugar Breakfast Sausage

  1. Cut your pork into about 1 inch cubes and place in a large bowl.
  2. In a small bowl combine all of your spices, herbs, brown sugar, salt & pepper and mix well.
  3. Pour spice mixture over your cubed meat and mix well with your hands.
  4. Cover bowl and refrigerate for 4 hours or overnight to allow the flavors to meld.
  5. Using a meat grinder grind your seasoned pork cubes at your desired coarseness.
  6. Stuff into sausage casings.
