Peanut Butter Peach Cobbler
- 1/3 c. shortening or vegetable oil
- 1/2 c. sugar
- 2 1/2 c. 40% Bran cereal
- 1 1/4 c. milk
- 1 egg
- 2 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. peanut butter
- 1/2 c. margarine
- 3 Tbsp. orange juice concentrate
- 2/3 c. brown sugar
- 3 cans peaches, sliced
- Mix cereal and milk; let sit 3 minutes until soft.
- Mix flour, baking powder, salt and sugar; add egg and shortening to cereal and mix well.
- Add flour mixture; stir with spoon.
- Set this aside.
- Mix in saucepan the peanut butter, margarine and brown sugar until smooth.
- Add orange juice concentrate and peaches with juice (cut in big pieces).
- Cook until it bubbles.
- Spread in baking pan.
- Drop first mixture by spoonfuls on top of this mixture.
- Bake for 25 to 30 minutes at 400u0b0.
