Creamy Broccoli Au Gratin Soup

  1. Cook onion in butter in a large saucepan until tender.
  2. Add water, rice and seasoning packets.
  3. Cover and cook over low heat 20 minutes.
  4. Combine flour and dry mustard in a small bowl.
  5. Gradually add about 1/2 cup of the broth, stirring until smooth.
  6. Stir remaining broth, flour mixture and milk into rice mixture.
  7. Heat to a simmer, stirring occasionally.
  8. Continue simmering until slightly thickened.
  9. Stir in cheese.
  10. Sprinkle with green onion.
  11. Serves 4 to 6.
