Shrimp, Spinach And Cheese Souffle
- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 3/4 c. milk
- 1/2 c. grated Parmesan cheese
- 1 c. finely chopped spinach
- 1 (4 1/2 oz.) can shrimp, rinsed, drained and finely chopped
- 5 egg yolks
- 5 egg whites
- In a saucepan, melt butter or margarine.
- Blend in flour.
- Add milk.
- Cook and stir until bubbly.
- Remove from heat; stir in cheese.
- Fold in spinach and shrimp.
- Beat egg yolks 5 minutes or until thick and lemon colored.
- Stir in shrimp mixture.
- Wash beaters and in large mixer bowl beat egg whites to stiff peaks. Gradually fold egg whites into shrimp mixture.
- Turn mixture into an ungreased 1 1/2-quart souffle dish.
- Bake in 325u0b0 oven for 50 to 55 minutes or until knife inserted near center comes out clean. Serve immediately.
- Serves 4 to 6.
