Garden Cheese Ball

  1. Press shredded carrot, zucchini and yellow squash between paper towels to remove excess moisture.
  2. Combine cheeses, grated onion and garlic in a large bowl.
  3. Stir well.
  4. Stir in shredded vegetables.
  5. Cover and chill at least 2 hours.
  6. Shape chilled cheese mixture into a ball.
  7. Combine cereal nuggets and parsley, stirring well.
  8. Coat cheese ball with cereal mixture.
  9. Wrap in wax paper and chill thoroughly.
  10. Serve with unsalted crackers.
  11. Yields 3 cups (23 calories per tablespoon).
