Spicy Sesame Noodles
- 1 lb. Chinese noodles or thin spaghetti (works great)
- 1/4 c. peanut butter (chunky or smooth)
- 1/4 c. sesame paste (tahini)
- 1/2 c. light soy sauce
- 1 c. chicken broth
- 3 Tbsp. sesame oil
- 2 Tbsp. sugar
- 2 Tbsp. rice vinegar, Chinese black vinegar or cider vinegar
- 1 tsp. dried or 1 Tbsp. minced, fresh garlic
- 1 tsp. dried or 1 Tbsp. minced, fresh ginger
- 2 tsp. chili paste or chili oil
- diced green tops from 2 or 3 scallions
- dried red pepper flakes (optional)
- Cook pasta according to package directions and drain. Meantime, mix together all other ingredients, except scallions and red pepper flakes.
- Add sauce to pasta and toss well.
- Sprinkle with red pepper flakes and/or scallions if desired.
