Sweet Snack Mix
- 14 cups popped popcorn
- 2 cups crisp rice cereal
- 2 cups salted peanuts
- 1 lb white candy coating
- 3 tablespoons creamy peanut butter
- 1/2 - 3/4 cup raisins (optional)
- 1/2 - 3/4 cup dried cranberries (optional)
- In a large bowl, combine popcorn, cereal and peanuts.
- In the top of a double boiler over simmering water, melt coating and peanut butter,.
- stirring occasionally. (I actually combine the coating and peanut butter in a microwave-safe bowl; microwave for 1 1/2 - 2 minutes, stir, microwave for another 1 1/2 - 2 minutes, stir.
- Pour over popcorn mixture; stir to coat. Spread evenly on waxed paper.
- Allow to set for at least 2 hours.
- Store in an airtight container.
- Yield: 5-6 quarts.
- **Note** White candy coating is found in the baking section of most grocery stores. It is sometimes labeled "almond bark" or "candy coating" and is often sold in bulk packages of 1 to 1-1/2 pounds.
