Sweet Snack Mix

  1. In a large bowl, combine popcorn, cereal and peanuts.
  2. In the top of a double boiler over simmering water, melt coating and peanut butter,.
  3. stirring occasionally. (I actually combine the coating and peanut butter in a microwave-safe bowl; microwave for 1 1/2 - 2 minutes, stir, microwave for another 1 1/2 - 2 minutes, stir.
  4. Pour over popcorn mixture; stir to coat. Spread evenly on waxed paper.
  5. Allow to set for at least 2 hours.
  6. Store in an airtight container.
  7. Yield: 5-6 quarts.
  8. **Note** White candy coating is found in the baking section of most grocery stores. It is sometimes labeled "almond bark" or "candy coating" and is often sold in bulk packages of 1 to 1-1/2 pounds.
