Flax Bread Without Yeast, Gluten, Sugar Or Dairy
- 100 g flax seed meal (preferably fresh ground)
- 120 g buckwheat flour
- 60 g rice flour
- 1 teaspoon baking powder (rounded)
- 1 teaspoon baking soda (rounded)
- 2 teaspoons xanthan gum
- 3 tablespoons oil
- 3 eggs
- 1/2 cup soymilk
- 1 tablespoon lemon juice
- Preheat oven to 180u0b0C or 350u0b0F Grease a small loaf pan (about 4" x 7" or 10cm x 18cm).
- Mix together the flax meal, buckwheat flour, rice flour, baking powder, baking soda and xanthan gum. The xanthan gum gives it a bit better texture, but could be eliminated.
- In a separate bowl, beat the eggs and add the oil, soy milk and lemon juice.
- Once the oven is to temperature, mix the wet and dry ingredients together, put in the pan, smoothing the top with a spatula. (The lemon juice acts with the baking powder, and it's best to mix it, then go right into the oven.).
- Bake for 35-40 minutes.
