Parmesan Swiss Potatoes
- 1/3 c. grated Parmesan cheese
- 1 Tbsp. dried parsley flakes
- 2 Tbsp. margarine or butter
- 2 Tbsp. flour
- 1 tsp. salt
- 2 c. milk
- 4 oz. (1 c.) shredded Swiss cheese
- 1 (2 lb.) pkg. frozen hash brown potatoes
- Heat oven to 350u0b0.
- Grease 12 x 8-inch (2-quart) baking dish. In small bowl, combine Parmesan cheese and parsley; set aside. Melt margarine in large saucepan over medium heat.
- Stir in flour and salt.
- Cook until mixture is smooth and bubbly, stirring constantly.
- Gradually add milk.
- Cook until mixture boils and slightly thickens, stirring constantly.
- Remove from heat; stir in Swiss cheese until melted.
- Add potatoes to Swiss cheese mixture, breaking up clumps of frozen potato if necessary; mix well.
- Pour into greased baking dish; cover with foil.
