Spicy Grilled Citrus Chicken
- 1 can frozen orange juice, thawed
- 1/2 c. canned tomato puree
- 1/4 c. honey
- 1 tsp. minced orange zest
- 1 tsp. minced lemon zest
- 1 tsp. minced lime zest
- 3 Tbsp. fresh lemon juice
- 3 Tbsp. fresh lime juice
- 4 garlic cloves, minced
- 1 tsp. thyme
- 3/4 tsp. cayenne pepper
- 3/4 tsp. freshly ground pepper
- 1 tsp. salt
- 6 chicken breasts (skinless and boneless)
- Combine all ingredients except chicken in a bowl.
- Add chicken and turn to coat.
- Cover and refrigerate overnight.
- Boil marinade for 1 minute.
- After the chicken has cooked for 5 minutes on grill, spoon marinade over the chicken.
- Grill and baste, turning every 5 minutes for about 20 minutes.
