Pineapple Duckling

  1. Remove excess fat from duckling and place in a shallow dish. Drain pineapple, saving juice.
  2. Combine pineapple juice, soy sauce, ginger, salt and pepper.
  3. Pour mixture over duckling and marinate 3 hours or more, turning duckling occasionally.
  4. Remove duckling.
  5. Saute onion and green pepper in butter.
  6. Stir in marinade and add duckling.
  7. Reduce heat to 212u0b0.
  8. Cover and simmer 1 hour.
  9. Remove duckling. Combine cornstarch and water. Pour into cooker, stirring constantly until gravy has thickened. Makes 4 to 6 servings.
