Spinach Or String Beans With Tomatoes And Spaghetti(Spinach All Pomodori E Spaghetti)
- 2 cloves garlic
- 1/4 c. olive oil
- 16 oz. tomatoes, chopped
- 1/2 tsp. red crushed pepper
- 1 small 8 oz. can tomato sauce
- 1 tsp. salt
- 1 Tbsp. parsley
- 2 pkg. frozen spinach
- 1 lb. spaghetti
- 1/2 c. water
- In medium saucepan, saute
- garlic in oil.
- When lightly brown, add tomatoes,
- sauce,
- red
- pepper,
- salt,
- parsley and water. Cook for 10
- to 12 minutes on medium heat.
- Add frozen spinach and cook
- an
- additional
- 25 minutes, until spinach is heated thoroughly.
- Boil
- spaghetti
- according
- to
- package directions. Pour cooked spinach over top of the spaghetti and toss thoroughly.
- Makes 4 to 6 servings.
