Cheesy-Topped Chops
- 8 pork chops, cut 1-inch thick (may use lamb)
- 1/3 c. all-purpose flour
- 1 egg, beaten
- 2 tsp. grated onion
- 1/4 tsp. pepper
- 2 Tbsp. cooking oil
- 3 Tbsp. butter or margarine
- 2/3 c. milk
- 1/2 c. grated Parmesan cheese
- paprika
- In skillet, brown chops in hot oil about 10 minutes; drain. Transfer chops to an 8 x 8 x 2-inch baking dish.
- In a small saucepan, melt butter or margarine; stir in flour.
- Add milk and cook and stir until thickened and bubbly.
- Stir 1/2 the thickened mixture into beaten egg; return to saucepan.
- Cook 1 minute, stirring constantly.
- Stir in cheese, onion and pepper.
- Spoon about 2 tablespoons of mixture atop each chop.
- Sprinkle with paprika.
- Bake, uncovered, in 350u0b0 oven for 30 minutes or until meat is done.
- Makes 4 servings.
