Honduran Pollo Con Salsa (Chicken In Sauce)
- 3 1/2 lbs frying chickens, whole
- 1/4 cup cooking oil
- 1/8 - 1/2 teaspoon hot chili powder
- 1/4 cup ground sesame seeds
- 3 whole cloves
- 1 cinnamon stick
- 1 teaspoon brown sugar
- 1/4 teaspoon fenugreek seeds
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups boiling water
- 2 tomatoes, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- Brown chicken in oil on all sides; remove from pot.
- Add chili powder, sesame seeds, cloves, cinnamon, brown sugar, fenugreek, and salt and pepper; brown in oil.
- Add remaining ingredients.
- Simmer until tender.
- Add chicken and cook until tender, turning occasionally.
- Add more water if necessary.
- NOTE: Peanuts can also be included in the sauce.
- Pork, instead of chicken, may be used.
