Ham Scalloped Spuds
- 5 lb. spuds, peeled or scrubbed and thinly sliced
- 1 or 2 medium onions, chopped
- 1 1/2 to 2 c. diced ham
- 2 Tbsp. dried parsley
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 c. flour
- 6 c. milk
- 2 c. grated Longhorn or mild Cheddar cheese
- Toss sliced spuds, chopped onions and diced ham in large bowl, mixing well.
- Combine flour and seasoning; mix well and toss with spud mixture until evenly distributed.
- Spread in large, greased flat pan (9 x 13-inch or 12 x 17-inch).
- Pour milk over spuds; cover pan with foil and bake in 350u0b0 oven for 1 hour and 20 minutes, or until spuds are almost fork-tender.
- Uncover; bake 10 minutes more.
- Remove from oven and sprinkle with grated cheese. Allow to sit 5 minutes to melt cheese; serve.
- Makes 12 generous servings.
