Taco Topped Potatoes
- 4 large baking potatoes
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 3/4 c. water
- 1 c. taco sauce
- 1/2 c. (2 oz.) shredded cheese (Monterey Jack cheese with peppers)
- Scrub potatoes; prick several times with fork.
- Microwave until done; let stand 2 minutes.
- Brown the ground beef and onion in a large skillet, stirring until beef crumbles; drain.
- Stir in seasoning mixture and water; bring to a boil.
- Reduce heat; simmer, stirring occasionally, for 15 minutes, or until liquid evaporates.
- Stir in taco sauce; cook until thoroughly heated. Cut an "X" to within 1/2-inch of bottom of each potato.
- Squeeze potatoes from opposite sides and ends to open.
- Fluff potato pulp with fork.
- Spoon meat mixture on potatoes; sprinkle with cheese. Yields 4 servings.
