Taco Topped Potatoes

  1. Scrub potatoes; prick several times with fork.
  2. Microwave until done; let stand 2 minutes.
  3. Brown the ground beef and onion in a large skillet, stirring until beef crumbles; drain.
  4. Stir in seasoning mixture and water; bring to a boil.
  5. Reduce heat; simmer, stirring occasionally, for 15 minutes, or until liquid evaporates.
  6. Stir in taco sauce; cook until thoroughly heated. Cut an "X" to within 1/2-inch of bottom of each potato.
  7. Squeeze potatoes from opposite sides and ends to open.
  8. Fluff potato pulp with fork.
  9. Spoon meat mixture on potatoes; sprinkle with cheese. Yields 4 servings.
